'Justin Chapple’s cheater version of homemade puff pastry comes together in just 30 minutes. The secret: Arranging thinly sliced frozen butter on an easy bread flour dough simplifies the laminating process. Slice the butter and freeze it while you prepare the dough. Roll out the dough into a long rectangle or oval. Normally, adding butter takes several repetitions of rolling the dough with the butter. This recipe abandons that process for a quicker, cheater version of the puff pastry. Layer the cut butter onto the dough and fold it. Repeat the folding process, known as laminating. You’ll notice that by your third roll, the dough is a little tougher. Fold it one last time and chill in the refrigerator. Whether you’re making tarts, turnovers, or even chicken pot pie, this pastry will save you in a pinch.
